EQUIPMENT:
Electric Hand Beater
Microwave Convection Oven
INGREDIENTS:
1.8 cups all-purpose flour
1.1 cups sugar
1 cup Butter
4 egg
1 tsp Baking Powder
1 tsp Vanilla extract
4 tsp milk
INSTRUCTIONS:
1. Get ready with all ingredients measured and at room temperature. Preheat Microwave convection oven to 170°C.
2. Sieve All purpose flour and Baking powder together thrice and keep it aside. Beat eggs very light and frothy in an electric hand mixer.
3. In a dry bowl cream butter and powdered sugar with Vanilla extract in an Electric hand mixer.
4. To the creamed butter sugar mixture add beaten egg mixture to it and mix in a ballon whisk.
5. Now add sieved All purpose flour and baking powder to the wet mixture in three parts by adding milk little at a time and fold the mixture gently until the batter attains dropping consistency.
6. Grease a 7 ″ round pan and dust all purpose flour twice and remove excess flour and line the base with parchment paper . Transfer cake batter to the pan and tap all around the sides to even the batter.

8. Once the cake is done, place it on a cooling rack for 15 minutes and unmold cake from pan and remove parchment paper.
9. With the help of a slicing knife cut into half and slice as per your wish. I usually prefer slices to have with a cup of Tea or Coffee.
NOTES:
All ingredients are to be measured accurately using a Digital weighing scale or in a cup. Ingredients are to be in room temperature before starting the procedure. Do not open the oven door during the first 20 minutes ,the temperature falls suddenly and cake will not rise properly and may collapse in the centre. Every oven behaves differently so adjust the temperature accordingly.
