Fried Mojarra.
The Mojarra Frita is exquisite, well browned and very crunchy! A traditional dish of the coast with lots of flavor and color! To prepare it just follow the step by step!

Ingredients:
3 mojarras or red snapper (red snapper)
10 large garlic cloves
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp cumin
1/2 tsp lime juice
1 tsp olive oil or your choice of olive oil
wheat flour for sprinkling
vegetable oil for frying
Instructions:
1. The mojarras must be clean and without scales.
2. Put the garlic, salt, pepper and cumin in a mortar or pestle and pestle.
3. We macerate the ingredients in the molcajete. When a paste is formed, add the lemon juice and oil, mix well.
4. With a knife we make 4-5 cuts on both sides of each fish.
5. Put the marinade inside each cut and inside the belly. Only a little on the outside and remove the excess, as the garlic that remains on the skin burns and takes on a dark color.
6. Sprinkle a little wheat flour on each side including the fins and tail. Remove the excess by shaking them a little.
7. It is important that the pan is the size of the fish so that it fries evenly. Depending on the pan we can fry all three at once or one at a time. Enough vegetable oil at medium high temperature.
8. Six to seven minutes on each side, depending on size, until well browned and crispy.
9. Drain well and serve the Mojarra with coconut rice, salad, patacones and lemon wedges.
