Ingredients:
500 g cold roast chicken
2 cucumbers
Half a red onion
100 g pickled peppers
60 g green olives in brine
60 g black olives in brine
1 tuft basil
salt and pepper
extra virgin olive oil
1 tablespoon lemon juice
✅The preparation of chicken salad with vegetables is very simple. First peel the cucumbers with a peeler and then cut them into cubes. Then put them in a colander placed inside a bowl, add a pinch of fine salt and mix. Let stand for an hour, doing so will remove excess vegetable water and any bitter aftertaste.
✅Cut the chicken into pieces all the same size, and the red onion finely.
✅Place the diced chicken, cucumber, onion, pickled peppers cut into strips, olives, and basil leaves chopped with your hands in the bowl. Season with a drizzle of extra virgin olive oil, lemon juice, and season with salt and pepper. Mix thoroughly with a spoon and place to rest in the refrigerator until ready to serve at the table.
