 This salad is filled with avocados, tomatoes, red onion, and cilantro to create a fresh summer flavor!



ingredients:

3 avocados ripe

▢1 lime

▢2 cups cherry tomatoes halved

▢½ cup red onion sliced

▢¼ cup fresh cilantro chopped, or parsley

▢2 tablespoons olive oil

▢1 clove garlic minced

▢salt & pepper to taste


instructions:

1. Cut tomatoes and onions. Set aside.

2. Cut avocados in half, remove pits and dice. Squeeze fresh lime over avocados and gently toss to combine.

3. Add remaining ingredients and gently stir.

4. Let stand 5-10 minutes before serving.


notes:

Store in an airtight container in the fridge for 2 days. 

Drain liquid before serving, if necessary. Stir and add a little extra lime juice and fresh cilantro.
