Delicious Lamington recipe Iconic Lamingtons are so easy to make and the perfect treat for Australia Day. With just ten mins prep, this easy lamington recipe will leave you with fluffy sponge cakes wrapped in chocolate sauce. Grab a hot cuppa and let's dive in.
Dry ingredients:
2 and 1/2 cup flour
1/2 tsp salt
1 Tbsp baking powder
1 cup sugar
Wet ingredients:
4 eggs
1 cup vegetable oil
1 cup milk
1 tsp vanilla
INSTRUCTIONS:
Preheat oven 180 degrees Celsius. In a bowl mix dry ingredients except sugar. In another bowl mix cooking oil and sugar until smooth, add each egg at a time and mix, add the remaining wet ingredients Combine wet and dry ingredients in one bowl.
Bake for 20 to 25 minutes depending on your oven.
Chocolate syrup:
1 cup fresh milk
3 Tbsp margarine
1 cup icing sugar
1/3 cup cocoa powder
1 tsp vanilla
In a saucepan heat milk and margarine stir until margarine is melted and add icing sugar, cocoa powder and vanilla mix until combined.
For red syrup:
1 cup hot water
1/3 cup apricot jam
2 tsp food colouring (red or pink)
Mix everything together
Fine coconut 3 cups, separate into 2 bowls for red and chocolate.
NOTE:
To make the process less messy, use right hand to dip in the syrup, left hand to toss in the coconut.
Dip muffins into the syrup and into the coconut. Sandwich muffins using pipping bag to pipe cream, caramel and jam. You can use your favourite topping.
For the cream:
1 cups fresh cream
1 Tbsp icing sugar
1 tsp vanilla essence (optional)
Whip everything until stiff, ready to use
