INGREDIENTS:
For the cake:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup coconut milk
For the frosting:
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup coconut milk
1/2 teaspoon vanilla extract
1/2 cup sweetened shredded coconut
INSTRUCTIONS:
1.Preheat your oven to 350°F (175°C) and prepare a 9-inch cake pan by greasing it with butter or cooking spray.
2.In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
3.In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
4.Add the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until combined.
5.Slowly add the flour mixture and coconut milk, alternating between the two, and mixing until just combined.
6.Pour the batter into the prepared cake pan and smooth the surface with a spatula.
7.Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
