Fresh Cucumber Tomato Salad with Red Onion & Herbs



Bright, crunchy, and ultra-refreshing—this salad is a straight classic that never misses. Juicy tomatoes, crisp cucumbers, sharp red onion, and fresh herbs all tossed in a simple dressing. It’s light, zesty, and perfect as a side or a quick healthy bite.


INGREDIENTS :

2 cups cucumber, chopped into chunks

1½ cups cherry or Roma tomatoes, quartered

1/4 red onion, thinly sliced

2 tbsp fresh parsley or cilantro, finely chopped

2 tbsp olive oil

1 tbsp lemon juice or red wine vinegar

Salt & cracked black pepper to taste

Optional: pinch of oregano or garlic powder


DIRECTIONS :

Prep the Veggies:

Add chopped cucumbers, tomatoes, and sliced red onion to a large bowl.

Season & Dress:

Drizzle with olive oil and lemon juice (or vinegar). Sprinkle with salt, black pepper, and optional oregano.


Finish with Herbs:

Add fresh chopped herbs and gently toss until everything is evenly coated.

Serve Fresh:

Serve immediately or chill for 10–15 minutes for extra freshness.
