Today I’d like to share a sweet recipe that reminds me of my childhood. Nothing beats Homemade Beignets! They’re soft and fluffy. Close your eyes, take a bite and enjoy! Fry, bake or Air-Fryer.
INGREDIENTS:
1 cup lukewarm milk -250 ml
1/4 cup sugar-50 g
1 Tbsp yeast-8 g
2 eggs
1 Tbsp vanilla extract-15 ml
3 3/4 cups sifted flour-500 g
1/2 tsp salt-3 g
1/4 cup softened butter-60 g
1/4 cup sugar-50 g
1 tsp cinnamon-5 g
Filling: pastry cream, jam, marmalade, chocolate.
DIRECTIONS:
In a bowl combine the lukewarm milk, yeast and sugar. Whisk it all together a bit and let it sit for about 7 minutes.
Add the eggs and vanilla extract and whisk.
Add the flour and salt and knead for about 2 minutes or until your dough comes together. Once the dough comes together add the butter and continue to mix or knead the dough until it comes away from the bowl ( around 8 minutes).
Roll out the dough onto a floured surface. Cut out the dough using a 3”(7 cm) cutter then place them on a baking sheet. Cover and let them rise for about 90 minutes.
Fry the beignets, about 2-3 minutes or until golden brown on both sides. Transfer the beignets to a large bowl lined with paper towels to drain some of the excess oil. Roll them in sugar.
Insert a small knife into the side and move it around to make a small incision. Fill a piping bag with the pastry cream or desired filling and pipe it into the Beignets.
Bake: Preheat oven to 400F (200C). Brush each beignet lightly with milk and bake for 12 minutes, or until golden brown. While the beignets are still hot, melt 2 tablespoons of butter and place the powdered sugar in a bowl. Dip the beignets in the butter and then in sugar.
Air-Fryer: Preheat air fryer to 350 degrees F. Spray the basket with cooking spray and add half the beignets. Spray the beignets lightly with cooking spray. Cook until puffed and golden, about 6 minutes. Remove and repeat with the remaining beignets.
