Lime and Coconut Drizzle Cake is a delicious and refreshing dessert that combines the zesty flavor of lime with the tropical taste of coconut. Here's a recipe that you can follow to make this cake:


INGREDIENTS:

For the cake:

175g unsalted butter, softened

175g caster sugar

3 large eggs

175g self-raising flour

50g desiccated coconut

Zest of 2 limes

2 tbsp. coconut milk

For the drizzle:

Juice of 2 limes

50g caster sugar

2 tbsp. desiccated coconut


INSTRUCTIONS:

1.Preheat the oven to 180°C/160°C fan/gas mark 4. Grease and line a loaf tin with baking paper.

2.In a large mixing bowl, beat together the butter and sugar until light and fluffy.

3.Gradually beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next.

4.Sift the flour into the bowl and fold it in gently with a metal spoon.

5.Add the desiccated coconut, lime zest, and coconut milk to the bowl and mix everything together until well combined.

6.Spoon the mixture into the prepared tin and smooth the top with a spatula.

7.Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the center of the cake comes out clean.

8.While the cake is still warm, make the drizzle by mixing together the lime juice and caster sugar until the sugar has dissolved.

9.Prick the surface of the cake all over with a skewer and spoon the drizzle over the top.

10.Sprinkle the desiccated coconut over the top of the cake and leave to cool completely in the tin.

11.Once cool, remove the cake from the tin, slice and serve. Enjoy!
