Fresh, colorful, and protein-packed—this salad brings the crunch, cream, and kick all in one nourishing bowl. Perfect for clean eating, keto, or just straight-up flavor lovers!


INGREDIENTS :

2 boiled eggs (medium to soft preferred), halved

1/2 ripe avocado, sliced

1 small tomato, sliced

1/4 cucumber, sliced

A few slices red onion

1 handful of fresh spinach or mixed greens

2 tbsp chopped fresh parsley or cilantro

Salt & black pepper to taste

Optional: pinch of paprika or chili flakes

Drizzle: olive oil, lemon juice, or balsamic vinegar


DIRECTIONS :

Boil the eggs:

For soft-boiled: simmer eggs for 7–8 mins. For firmer yolk: 9–10 mins. Cool, peel, and halve.

Prep the veggies:

Slice avocado, cucumber, tomato, and red onion thinly. Wash and dry your greens.

Assemble your bowl:

Start with a bed of spinach or mixed greens. Neatly arrange avocado, eggs, tomato, cucumber, and onion on top.

Season it up:

Sprinkle with salt, black pepper, chopped herbs, and a dash of paprika or chili flakes if desired.

Finish with a drizzle:

Add olive oil and lemon juice or your favorite light dressing for that final touch.
