Protein Power Bowl with Avocado, Mushrooms & Eggs



This bowl’s got everything: creamy, earthy, savory, and loaded with fuel. A low-carb, high-satiety meal for clean eaters and gym beasts alike!


INGREDIENTS :

3 hard-boiled eggs, halved

1/2 ripe avocado, sliced

1 cup sautéed mushrooms (cremini or button)

5–6 cherry or grape tomatoes, halved

1 cup spinach or mixed greens

Salt & black pepper to taste

Optional: red pepper flakes or chili flakes for heat

Olive oil drizzle or lemon juice (optional)


DIRECTIONS :

Boil the eggs:

Place eggs in a pot, cover with water, bring to a boil, then simmer for 9–10 minutes. Cool, peel, and slice in half.

Sauté the mushrooms:

In a skillet with a little olive oil, cook sliced mushrooms over medium heat for 6–8 mins until golden and tender. Season with a pinch of salt and pepper.

Assemble the bowl:

Start with a bed of fresh spinach or mixed greens.

Add halved eggs, sautéed mushrooms, cherry tomatoes, and fanned-out avocado slices.

Season it up:

Sprinkle with salt, pepper, and red pepper flakes. Drizzle with olive oil or lemon juice if you like.
